I know summer has arrived when watermelons appear in my local farmer’s markets. Watermelons often arrive sooner in supermarkets, but I like to buy locally grown fruit as often as possible. Sometimes, though, I buy too many, so I make the extras into refreshing icy watermelon lime coolers.
Watermelon is mostly water, so these gigantic, heavy fruits blend down into compact drinks. The flavor of a sweet, ripe watermelon is an unforgettable summer treat. I add lime juice and fresh mint to enhance that delicious watermelon flavor. A little stevia makes the drink sweeter without adding to the glycemic load.
Chop up the watermelon, and toss it in the blender with fresh mint leaves, lime juice, a little stevia and a lot of ice. Pour into glasses and serve immediately. Any hot and thirsty folk in your vicinity will thank you forever, and beg for more.
Watermelon Lime Cooler with Fresh Mint
For a cool summer drink, chop up half a watermelon, and toss it into the blender with lime juice, fresh mint and lots of ice.
Ingredients
- 4-5 cups chopped watermelon
- 2-3 cups ice
- Juice of two limes
- 3/4 teaspoons liquid stevia (to taste)
- handful fresh mint leaves, plus extra sprigs for garnish
Instructions
Put all ingredients into a blender, and blend until smooth.
Pour into glasses, garnish with sprigs of fresh mint, and serve immediately.
Notes
For a smoothie instead of a cooler, add less watermelon and more ice.
Start with the juice of two limes and chopped half a medium sized watermelon.
Put lime, watermelon, stevia and mint into the blender.
Pile on the ice…
…and blend into a frothy summertime cooler.
Pour into tall glasses, top with a sprig of fresh mint, and enjoy!
