Creamy Dairy-Free Orange Sauce

I dribble this sauce over asparagus. It also works well to dress up any type of potato.

The key to this recipe is orange zest, an ingredient I used to avoid for lack of a zester. I thought making orange zest was tedious and impossible, a task left to professional chefs. Then I bought a $2 orange zester at Ikea, and my fear of zesting vanished. If you don’t own a zester, you can use a cheese grater with teensy holes.

If you’d prefer a smoother sauce, make it in a blender or food processor.
