This is a positively decadent smoothie. Fresh apricots are a summer treasure, so it feels exceedingly indulgent to blend those beautiful pink and orange fruits into a thick, tangy smoothie.
I bought some fresh apricots, then put them in the back of my fridge. They failed to ripen sufficiently, so I dutifully placed them in a paper bag on the counter for a few days. When I opened the bag, those gorgeous fruits were dotted with brown spots!
Still edible and delicious, but not picture perfect enough for the tart I’d planned, I blended those beauties into a rich and scrumptious apricot smoothie. I added a little stevia to offset the tartness of the apricots, and threw in some fresh mint for a complimentary flavor. Sublime!
Fresh Apricot Mint Smoothie
Fresh apricots and mint combine in a refreshing, tart smoothie.
Ingredients
- 4 cups fresh apricots, pits removed
- 4 cups ice
- 1/4 cup fresh mint
- Stevia to taste
Instructions
Put all ingredients into a blender, and puree until very smooth.
Pour into tall glasses, garnish with fresh mint sprigs, and serve immediately.
Cut the fresh apricots in half, and take out the pits before putting them into the blender.

…and a lot of ice.
Blend into a perfect summer smoothie!
